Hot and fast beef ribs last night on the Weber Summit Charcoal. GF says they're the best she's had. I think they turned out pretty good. Definitely a little different then low and slow, but jury still out on which I prefer. 350-375 indirect with mesquite lump until 195* internal. Very basic, very good. Rubbed with Meat Church Holy Cow rub.
*I put the ribs on while the lump was getting hot and still smoking. Wanted to get as much smoke on them before the temp was high...
Looks very tasty from here. Nice smoke ring on it too.
