They're worth doing and it looks like they're done right here.

The hardest part about doing them is finding bones with some meat on them.

What's that tube smoker? I have never seen one of those before. Do they work well?

I have seen them before

I also would like to know how well they work. do you have to put it in the "fire"? how long do they hold up?

The tube smoker works very well; supply good quality smoke with no worries of creosote/bitter taste as you use wood pellets for the smoke. Basically fill it with pellets and light an end with a torch and let it flame for about 10 minutes, blow out the flame and place it in you smoker or grill and let it smolder. The 12' inch model will smolder and smoke 2 to 6 hours pending the temperature. Under 100º it should go 5 1/2 to 6 hours, at 325º - 350º it may only smolder and smoke 2 hours. They are also available at www.owensbbq.com
