I smoking a 15lb brisket and a turkey brest tomarrow
Should I use my 22WSM or my Ranch??

Nah.  Too much charcoal.. if I was going to use two
It would be the WSM and a 22.5 kettle

I'd probably run two cookers. I'd run the turkey around 375-400 and I wouldn't let the brisket run over 275

My choice(s);  two WSM's,  one for turkey at 325-350 and one for brisket at 225-250.  I'd use 18s but that just me.
