After looking at different techniques, I had another go at pizzas. I did charcoal rails. I'm gonna do the wood at the back next time like Kilted Griller suggested, It would have cut the cooking time in half i think. Cooked both pies for about 20 min a piece. I remembered to use olive oil on the crust, so no black crust.

Took longer, coals were dying off and I didn't let the cheese get the leopard spots I like. But it was a hit.

With the rails used is it setup for indirect cooking Craig? Can't see under the stone but I think that's what it looked like. What temp did you cook the pies at? They look really good.

To answer your question, landgraftj I used the charcoal rails for indirect cooking. Temps were around 355-360. Definitely doing this again, but I'm going to try wood in a charcoal basket at the back of the grill.
