Title: Nashville Hot Chicken

Hey guys, I was so impressed with the vortex yesterday, I just had to bring it back out today. I've read a lot about Nashville Hot Chicken and since that I love spicy foods, I've been wanting to try it for awhile. I've had it a couple times at KFC, but does that really count? I don't think so, therefore I decided to make it myself.

This cook was inspired by @bigmikey because I've had this idea ever since I saw his kettle fried chicken post awhile back.

I had some chicken legs leftover from last night that needed to be cooked or placed in the freezer. I dipped them in some milk, louisiana hot sauce, seasoned flour, then rolled in the flour mixture, back in the dip, then back in the flour. I lit some charcoal and grabbed an adult beverage.

On the kettle!

It got too dark outside, so I couldn't get any good pics of the finished chicken on the kettle. I then rolled the chicken in a mixture of hot vegetable oil,  lots of cayenne pepper, some brown sugar, chili powder, and s&p.

I have no problem handling spicy foods, but this chicken was like holy shit spicy. It came out really crispy too, as crispy as any fried chicken joint around here.

Hot vegetable oil, as in seasoned, or heated? Gonna have to try this.

Looks great!
We got a hot chicken shack in town, I like it a lot, but they have various degrees of heat, I can only go middle of the road...
My buddy gets the hottest, but he has to wear a sweatband

I know it's normally served with pickles, but my wife will shoot me if I bring a jar of pickles in the house. This stuff had my nose running it was so hot. The brown sugar really helped balance the heat and provided just a hint of sweetness.

I've been to Prince's in Nashville. It was really tasty. I made some with @austin87 earlier this year:

The fried chicken was delicious. The hot oil flavor from Prince's was way better balanced though. Our spices were too "earthy" imo but still tasty.

OK, so maybe I'm not understanding this correctly.  You do this on the grill, then once it's cooked you roll it in oil?  Doesn't that make it too greasy and soggy?

Yes, it is done on the grill until the chicken is cooked through. I then heat some oil in a dutch oven and toss in some cayenne pepper, chili powder, brown sugar, garlic powder, and s&p. It's rolled around just so the sauce can coat the chicken. It doesn't come out greasy and soggy, but rather very crispy and spicy.

I gotta say ... This looks fantastic!!

Did you remove the skin? Lately, I have been experimenting with fried chicken.
I remove the skin before it goes thru its seasoning faze, and then for its oil swim.
