Starting to really use the crap out of this rotisserie
@Travis. So glad you pushed me to use it. I even have the trussing down now.

Doesn't it just turn out the most incredibly juicy birds. What do you like to use as the seasonings

I use Dean and Deluca poultry rub under the skin and Trader Joe's lemon pepper on the outside of the skin. I use the poultry rub mixed with butter under the skin of my turkeys also.
@Cellar2ful I've been having a lot of success with using herb butter under the skin too. Roasted garlic, thyme, rosemary, sage, s&p, with some chicken seasoning mixed in. Same chicken seasoning for the skin too. Been working real good.
Your bird looks incredible. Nice tie up.

This is the best YouTube tutorial I found about trussing a turkey (chicken). I did not realize the placement of the forks, up or down, make a difference on overcooking the breast meat.

Yes sir. You posted that for the Thanksgiving thread. I had no idea about the placement either. Makes sense though.

This method tucks the wings in nicely. I to have recently discovered the wonders of the roti.
@Cellar2ful , Have you cut into that yet? I can be there (with mashed potatoes of course) in 2 hours if I hurry!!!....LOOKS AWESOME!!
@varekai- I have seen you make that turn around drive before so I would not put it past you (lol).
@Cellar2ful , HAHA, did it last weekend and a turn and burn to Bako the weekend before... I think i'm nuts too!
That's just pretty. Damn fine job! 8)

Agree with Travis ^
I agree too!
I feel like every other gadget or accessory you can cheat/hack and get similar results, except the rotisserie. There's no substituting the self basting crusty goodness that comes from spinning meats on a rotisserie

@Cellar2ful pulled me into this game too. I had owned a few rotisseries before and chickened out every time before using them. That was until Thanksgiving and a meeting with Cellar. Now I use the roti on every cook I can and look to buy meats. I'm planning to upgrade my equipment next and invest in a basket to spin smaller stuff. Here's my turkey, everyone agreed it was the best they ever had. It was really different than what we were all used to, juicy and flavorful in every part. Thanks again Cell!
I have to thank
@Travis for getting me into using a rotisserie. I resold four rotisseries I acquired on CL, before Travis persuaded me to try cooking on one. I agree with WNC that you can not duplicate the results achieved by using a rotisserie. I am finding I prefer spinning a bone-in rib eye roast now to cooking individual steaks.
I will be spinning a turkey tomorrow on the rotisserie for our New Year's Day dinner.

Absolutely agree!! I have had a roti for about 1.5 years. Spinning a bird on it gets amazing results, indeed. :D
I have been using this method with all the birds since I first experimented with it. I recommend it.
