So I bought the gourmet grill and a vortex
Love them, but.... the vortex gets so hot that it burns the chrome
Playing off the center grate and then it rusts.
How can I fix this and/or prevent it?
I just bought the porcelain grate but I'm afraid the
High heat will destroy it.. what's the answer?
Would removing the center section be the answer?

Why are you using the vortex with the center section in. The sear grate is cast iron as well as the griddle and wok.
The vortex is hard on the center of a grate. I have dedicated one grate to use only when I cook my vortex wings. I have bought the gourmet grate but haven't used it yet.
When I cook wings I remove the center when I sear steaks I use the center and then remove and cook indirect.

In addition to toasting out any grate placed above it the vortex will change the color of the lid on the Kettle as well. My "vortex" Kettle is a Copper and the area under the lid handle shows 4 or 5 spots where the color has changed slightly.....hot or cold.
My advice for using the vortex is use a gourmet grate with no center section for wing cooks and the like. For searing use a reasonable amount briquettes and as soon as you are done cooking remove the grate. Also do not use the vortex in a Kettle you would consider valuable at all. I have a spare unused Copper lid.
