Ha, I started mine at 11:30 PM hoping for a 12 hour cook and a three - four hour rest for dinner around 4:00 PM today,,,, hit the sheets at 1:00 when the smoker settled in at 230*. got up at 06:00 and brisket was at 170* IT. Wrapped in butcher paper and Ended up at 205* and probe tender two hours later. Wrapped and resting now. Texted my son that dinner will be early at 3:00,,,, but very worth the effort!
it's all fun!
Great pic, bud. You look like a man in need of a cup of coffee.
Enjoy the quite smoke.

Build a fire outside and sit by the fire with some coffee.

I actually like getting up early or staying up late for long smokes. Sip a cup of strong coffee and enjoy the solitude.
After the long cook, I also love pigging out and falling asleep right afterwards.

Try cooking on a stick burner for lunch serve time.
The end result always makes it worth it for me. And it was, brisket turned out great.

I'm planning on doing something similar this Saturday. Fall is my favorite time for long cooks.

Been there done that. It's a passion for Q that drives us!
this "hobby" AKA Weberitis, is not necessarily the "fun" part, all the colors styles and accessories will make ya crazy trying to amass them all ....The FUN part is the COOKING on them!..LOL
How were the results?
If it ceases to be fun, use the oven.
