Bacon is natures perfect food. Especially when you smoke it. This is always fun and rewarding. I have a very simple set up that works every time. It is easy to keep the temp at 250 for a nice low and slow smoke using apple wood chunks. Cooking time is about one to two hours. I used thick cut bacon. I use the same set up for bacon wrapped jalapenos (aka turds).
I used one charcoal basket and then line the rest of the charcoal grate with foil

I lay out the bacon in strips of two. I will separate them as they cook.

In the course of one to two hours I will flip them. Bacon almost done.

Might try this sometime. Would it be easier to put a drip pan down instead of foil? Save the bacon grease for breakfast? I usually have a jar in the fridge at all times.
