I have a dedicated KettlePizza-only redhead (M code).

Did up some pies on Labour Day ....

The colour change is awesome!!

I used to use aluminum foil, with firebrick on top of that ... But, I found that the foil degrades rather quickly and becomes paper-like.

Just recently, I cut a piece of aluminum sheet (16 gauge, I think) for the top, plus the fire brick.  This was my 2nd time using this set-up.

Pretty sure it reached close to 1000℉, but cannot verify ... Never seen the needle buried so far ....
And, have never seen the entire bowl get this dark.  Usually just the back where the charcoal and wood is concentrated.

Probably a silly question since the KP itself is aluminum, but are you worried at all about that top sheet leaching chemicals at those temps? I considered doing that same thing but thought maybe SS would be the better option. Love that rig though!

That color change is amazing.  You could use it as a kiln and fire pottery in that thing.

Sorry, I wasn't trying to derail the thread but it seemed an appropriate place to ask. I've been using an old pizza stone on the top grate and it works really well but I do like that setup with the aluminum sheet and firebricks too.

The stone was measured at 596*-793* with a IR thermo - getting Marooned! Darker than it appears.
