Title: Dino Bones

Gonna do a full four bone plate today.  I think I have a pretty good plan but I'd like some suggestions.

I take the underside membrane off (there's two, the second one is way not worth the trouble), thin down the fatcap a little, rub & smoke with oak or something a bit strong, low / medium heat for about 5+ hours or until you get a good soft toothpick test.....that will tell you the fat has released & rendered enough.....best steak on a stick there is !!!!!

Also, panning on a small cookie rack, with a little broth for covered steaming late in the game is a possibility.........

The ones above were rubbed with a little pepper, granulated garlic & UN-sweetened cocoa powder.....real good combo...... 8)

@1buckie thank-you sir.  Going to use oak and a little mesquite.  Did a lot of homework over the week.  I did take the skin off the back.  Really not much trouble with that.  Rubbed down with beef base and S n P.  I'll definitely post some pics on this one.  Thanks again.

.....get a big pirce of charcoal, those things are huge!!!

I have yet to do a full plate, so I'm not much help. I've done the smaller singles enough to know I don't like too much salt in the rub. Hands down, my favorite thing to BBQ! Looking forward to your outcome!

I pull the membrane and trim the fat. There is a bunch of silver skin on it. Salt, pepper, chipotle pepper for heat and let it ride.
