Title: Grilled Porterhouse Tonight

Caught this 40oz Porterhouse on sale so I set it up to air age in the fridge 3 days in preparation for tonight's dinner.   I knew I wanted high heat so I loaded up a big puke of Kingsford Professional and set it up under a cast iron grate.  Seared it off on each side then allowed it to cook indirect till it hit medium. The family agreed this may have been the best steak they've had to date so I'll consider it a win!

Nice! I've done a 4 day age with a steak. I wrapped it in cheese cloth and did the same air dry in the fridge. I think I saw it on America's test kitchen. Man, your steak looks great!!
