Super crispy skin, moist meat and a little smokey. Used a couple small chunks of oak. Don't think I need a vortex.

Now to watch the game. Go Hawks!

@TheDude  -  Exactly the way I do them.  It's so easy to get caught up in rubs, spices and sauces, but floured wings with Franks Wing Sauce is where it's at!

@MikeRocksTheRed Hawks win!

So did the Caps tonight!!!!  Tough losing to the Hawks the other night, but at this point the Caps need a few of those as a reality check!

How was that Americano stout? My sister in law works for Stone and she's been promising me one of those.

I love stouts. Stone's coffee milk stout is great too.Stone Xocovesa from this holiday season is one of my all time favorite beers. Too bad it's seasonal.

I had a great Serrano Pepper Double Stout from Green Flash the other night. Very mild spice but killer beer. Love the dredged wings, wouldn't know they weren't fried.

Wings and beer sound and look really GOOD! So no seasoning whatsoever besides the hot sauce? I'm really interested in trying it. Good cook.

I've heard of using flour to crisp up the skin. I'm going to need to try that. Those wings looked epic!

@Travis I just barley dredged them. Once cooked and sauced, you'd think they were naked.

@TheDude you inspired me to do something similar, with the 2 char baskets and the center insert of my GBS grate removed. Mine were dredged in gluten-free flour, S&P added to flour. Mine were full wings with all 3 sections; it's all I can ever find that's not frozen. Another change was to glaze them while still on the grill towards the end. Had kids eating and didn't want it too spicy for them, so a fuller coating wasn't a good idea. Sweet Baby Ray's Buffalo Sauce/Glaze.
