Title: Cornbread stuffed pork tenderloin

Opened up this tenderloin and seasoned it with Weber's Honey Garlic Rub. This stuff is so good! And some Weber's KC BBQ Rub.

Then I made a cornbread dressing with Jimmy Dean pork sausage. I added sautéed onions and garlic for a nice savory flavor inside the core.  Then I wrapped the loin.

Then wrapped in bacon to seal in the moisture.

One hour into the cook utilizing my slow and sear. I used a chimney of hot coals and did a two zone cook at 275 degrees. Added a couple chunks of hickory.

Cooked for an additional 30 minutes and topped this off with a maple syrup glaze sauce.

Done deal. Moist and flavorful.

Looks good!!!! :) I havent used the SNS with a chimney full of charcoal yet.  I usually load it up and light about 8-9 cubes and dump on one end.

Oh, man.  I am following in those footsteps.  Looks delicious, I am going to copy this cook!  Between you and a few other folks on here I am starting to give the SNS some serious thought.
