Title: Rib dilemma

All I wanted was a small package of baby backs for me and the wife, two racks would be plenty. So I stopped at Costco on my way home from work last night. They usually have 2 and 3 pack slabs ready to go. Well they were sold out and only had 3 packs of spare ribs or the already seasoned ones. I got the smallest pack they had, just over 9 lbs.

I brought them home and cleaned them up a little. Membrane came right off without a struggle.

Rubbed them all up with lamberts sweet rub o'mine from my secret Santa

Since there were 3 of these big boys, the 22 WSM got the call. No problem, I got a bunch of things to do today anyway so I can set it and forget it.

Oh I will. Everyone here is going to experience my dilemma. Lots of ribs for 2 people. This was 1 hour in

About done, passed the bend test, saucing 2 racks up cause the wife likes them sauced and I don't mind.

Where's the dilemma ???    I see one rack for her, two for you  ...  dump the rice and yellow kernels.   At least one six-pack of Extra Stout Ale.           SJ

Hummmm, now I see the problem  ...  to keep a couple of ribs for a late night taste or plow full steam ahead.   Good dilemma to have in my opinion :)

Thanks guys. The only real dilemma was I wanted to use my OTG but they didn't have the 2 packs of baby backs so I had to run the 22 WSM.

I cook 3 racks all the time on my 22 with a rack..They come out great.  3 racks are my limit on  the kettle. I just cant come to buy the WSM and I had my eye on a deal for a few weeks..lol

Yeah I know I could have used racks, I prefer not to use them, also I don't mind using the WSM especially when I got other things to do and won't be around for most of the cook.

Austin87, get one if you can. You can never have too many options for cooking.

@iCARRY  -  I understand your delemma.  Smart and Final has Spare ribs on sale for $1.47 right now.  I wanted to pick up one rack to do on New Years Eve to come off the grill around midnight for a late night snack for everyone.  I got to Smart and Final and couldn't beleive how big a rack of pork spare ribs were.  I guess maybe I have never seen a rack of spare ribs before??  I didn't think I'd be able to time that big hunk of meat right for it to be ready at or shortly after midnight so I went with a pack of pork back ribs.  In the end it was the right decision especially since they came off at 11:45pm and were ready to eat after the ball dropped, but I am definitely interested in do some big ass spare ribs.  How long did they end up taking?

I pulled them off at 6.5 hours. They were a little over cooked. Not too bad though. Probably perfect at 6 hours. Temp never went over 239, no water in the pan, no wrap. Just cooked straight through.
