Title: Mad Hunky Baby backs

Championship Sunday for fantasy football, and I cashed in big for the 3rd straight year. Had to cook some ribs to celebrate.  Covered in Mad hunky General purpose. After 2.5 hours wrapped in foil with butter, honey,  brown sugar and more MHGP. After 1.75 hours unwrapped,  added more seasoning then topped with an apple/bourbon sauce. 45 minutes to stiffen back up and we're done

Those are some seriously meaty baby backs! I've been on a spare rib kick lately and haven't done any baby backs in a while but I can see that I'm due!

Did you foil at first start then unwrap? If so, how much smoke actually penetrates the meat?

No I do my baby backs 2 hours 30 minutes smoke, then wrap for hour and 45 minutes,  then unwrapped and glaze for last 30-45 minutes. 5 hours at 225

I see what your saying, it's missing a comma. It should of said this

Ahh, I see; thank you for clarifying. Thought I was missing out on something revolutionary by wrapping the ribs first. On one hand it seems all the goodness in foil would penetrate the meat but at the expense of not getting smoke.

Did one rack on 22" kettle indirect over the vortex and 2 racks on my yoder pellet smoker. All 3 racks had a great smoke ring
