Title: Christmas Eve wings on Mini-WSM

We've had some ridiculously nice weather this winter hwre in Iowa so I thought I would take advantage of it and do some smoked wings on the mini-WSM.  I filled both racks and smoked for 3 hours with some cherry wood.  I used the Party-Q and it worked amazingly well.  Started with a low temp (175) to get some smoke on them and eventually raised to 275 at the end to get them nice and crispy.  Stupid me forgot to get a pic of the end product, but they were a big hit with the family.  Here are some pics of my setup and the wings about an hour into the cook.

That's a nice rig you got there. I smoke my wings the exact same way, low then high for the crispy. I need to look into a controller for my mini.

Sharp looking mini there, wings look good too!
