Title: Pastrami Time!

I bought a corned beef brisket a little while ago and afer 60 hours of sitting in the rub I started smoking it.  Here's teh recipie I used.

I snaked briquettes around the edge of my performer starting just over the touch and go burner.  Then i inverted the charcoal baskets and set a large 9"x12" baking pan filled halfway with water on top of that.  I arranged apple wood chunks every 3-4 inches or so and lit the charcoal with the propane burner.(https://scontent-ord1-1.xx.fbcdn.net/hphotos-xap1/v/t1.0-9/12049714_10206938774341534_3208431376331696688_n.jpg?oh=e33201348156028778715184fb5f2a54&oe=56988508)

Looks great! ... I love the pastrami I made earlier this year, albeit it was made in my WSM.
