I bought a corned beef brisket a little while ago and afer 60 hours of sitting in the rub I started smoking it. Here's teh recipie I used.

I snaked briquettes around the edge of my performer starting just over the touch and go burner. Then i inverted the charcoal baskets and set a large 9"x12" baking pan filled halfway with water on top of that. Looks great! ... I love the pastrami I made earlier this year, albeit it was made in my WSM.
