Here we go! Our air conditioning has been out for the last three days here in Las Vegas which SUCKS...fortunately things have cooled to the upper 90s, but I still haven't wanted to cook in the kitchen. On the menu tonight is a family favorite, sliders on Hawaiian rolls. Here's how we do it for our family of four.
Defrost one pound of ground beef. (I'm using Costco's 87% lean beef...it used to be 88%...interesting)
I mix it with my go-to house seasoning (salt, garlic powder, and pepper)

I place the ground beef in a shallow soup bowl and pat it so it stays just inside the rim of the bowl.

Put it back in the fridge for at least a half hour so it chills, making the burgers easier to form.
Meanwhile, I fired up my workhorse stainless steel performer.

Now, I forgot to take a pic of this step, but I cut the ground beef like a pie into eight even size wedges, which allows me to make 8 patties of roughly equal size. 1/8 pound burgers aren't much, but you can eat a lot of them! :)
I put my CI skillet directly on the fire, and get it blazing hot. I cook the burgers for a minute and a half per side, pressing them once to get that nice browning on the outside.

Two batches of burgers takes about six minutes...the only thing I forgot to do tonight (I think because of all the pics) was to put the cheese on the burgers while on the grill...I used Muenster, although my favorite is smoked gouda.
Place those burgers on the Hawaiian rolls, and serve those little guys up. I had mine tonight with fresh tomato, avocado, mayo and sriracha. The last burger I had (not pictured) also included two dill pickle slices. My lovely wife (former professional photographer) took these photos on my phone, and then my daughter took a pic of one in my wife's hand to get you a feel for the size. I love these burgers because they're quick, crusty on the outside, and juicy on the inside. Best wishes to all of you on a great cook this weekend!

Headed back to California this weekend, so I had to get the cook in today. Having just roasted, peeled and processed 30 LBS of Hatch, I decided on a green chile theme.
The ingredients (clockwise from bottom left): 3 slices of kraft singles, a Hawaiian sweet roll bun, mushrooms, 2 eggs, my favorite rub, 1 LB of organic 85/15 beef shaped to hold the toppings, a small bacon weave (its not just for fatties anymore), and 2 roasted chiles

Here's a food safety question for you guys... looking for some wisdom here 8)
I had planned to cook my burgers last night and had made the patties earlier in the day. They were wrapped in butchers paper and stuck in the fridge until about 5:30 last night when I took them out to cook... well just as I did that my father called and asked if we wanted to come by for pizza so we had a quick change of plans. Crappy part is, I left the cold burgers (still in the paper) sitting out on the counter and it was a couple hours before we came home and found them. The package still felt cool to the touch but should I start over? Not an issue re-making but Id like to not waste it if possible.
Thoughts??

That's a tough one, but I'd error on the side of caution. Unless you like your burgers well done, then I don't think it would be a problem. You don't want to wind up like Brian's dogs...

I was really hoping to come up with something super creative but had to fall back on a twist of a stand by favorite, but I have a decent excuse... I became an Uncle!! My Sister just had a gorgeous little baby girl and today I got to hold my niece for the very first time! Salmon Burgers
3/4 lb wild sockeye filet with skin on. I removed the skin and salted it, it will be direct grilled for a salmon skin crackling on the burger. Salmon hand sliced into 1/4" chunks, mixed with breadcrumbs, an egg, Dijon mustard, red onion, and salt and pepper.

Dressed with mayo, butter lettuce, heirloom tomato, salmon skin crackling, and avocado mash on a telera roll from the Safeway bakery.
I'd never done salmon burgers before, they turned out really good. It's no substitute for a juicy beef burger but they were fun and added some nice variety.

Diablo Burgers
Boneless Chicken hot wings stuffed into a juicy beef patty , topped with pepper bacon , blue cheese and a creamy sriricha mayo . Served with garlic steak fries and an Asian slaw .
First I made the sauce , mayo , sriricha , sweetened condensed milk, red pepper and sour cream .

So at he last minute my wife invited the neighbors down for some burgers.....If Troy is reading this i was Pete and his wife and kids...Anyhow it was no big ordeal, but I figured I would post a few pics to join in the fun, and no I didn't throw anything on the ground...although I was making s'mores later and I did drop a few marshmallows.

I have no clue why I didn't think of trying this sooner... it works fine as-is but I am going to make up some longer legs so they can come all the way up through the table just as they would stock.

This is my Ultimate Island Hangover Burger.
Hot and spicy pineapple chutney that I blended down with the boat motor. The rest of the burger contents are SPAM, 1/2 lb ground beef burger, kimchi, Colby jack cheese, and egg all on a King Hawiaan burger bun.
Some love it, many hate it. 8)

I used 3 pounds of ground chuck abducted one pound of ground pork.
I seasoned with Northwoods blend from penzeys, added worcestershire and ground up funyuns.
I formed the meet around the cheese.

@Troy about this in the past and he's willing to host pics of a reasonable size for use on the site. The logic behind this is that server storage and bandwidth is affordable and uploading it to the WKC server gives the picutre better stability in the future.

Here is my entry. I stuffed burgers with sautéed jalapeños, onions, bacon and pepper jack cheese. The burgers were just below 16oz each. I seasoned with plain salt and pepper. When cooking burgers I always skip the American singles and go to the deli department at my local super market and have them cut me some extra thick slices of cheese. Thanks for looking.

@SixZeroFour Wish I'd seen your post sooner "Hamburger Helper" is an acceptable excuse to OVER-cook beef in such situations. Double heated (browned w/ onions, etc. then brought to simmer w/ noodles) should clear concerns...
I didn't quite get to make burgers ... closest we got was pulled pork sammys and sliders.
