It was raining out this morning but the forecast called for a beauty afternoon and I had the day off. So out came my favorite cooker for some side ribs:

Ribs got a thin layer of grape seed oil and some Dizzy Dust with cherry and rum barrel chunks on top of the coals. This was a hot and fast cook with dome temps in the 350-400f range. I finished up in a little under 3 hours. Just before saucing:

Hoss was kind enough to bring me a bone. Very nice rib and I also recommend white lightening. I start to get nervous when the bottle is half empty. Need to stock up.
