I saw this 3# brisket for nearly chuck roast price & knew what I had to do.

Pulled @ 200ish, not quite probe tender, yet..

I didn't wrap or cooler as I had a small insulated box waiting to rest it (after I pre-heated it w/ a cup of water)
just another use for the microwave...

The fat cap slid right off then I Sliced & we made soft tacos w/ peach salsa + ABTs & raw greens:

Whats in sale is usually what in my grill definitely a bonus that it was brisket in your case. Results look great.

@ 3# it didn't take too long (or cost too much)
I liked it fine & will salt it up a bit next go

My 'camera girl'  thought it was "Amazing" & wants to do it all again...
