Title: Smoked Chicken Cordon Bleu

I decided to try doing it with some boneless skinless thighs that I got on sale. I wasn't thrilled that it was skinless but I figured oh well I'll give it a shot.
I used black forest ham, block cheddar cheese, rolled it up and tied it off. Smoked at 325*F with hickory wood until internal temp. was 165*F. It took about 1 1/4 hrs. A little of the cheese ended up in the drip but it was still mighty tasty!

Looks great! Were you happy with thighs instead of breasts? Kind of a silly question I know, because thighs are delicious, but more on the overall texture.

@austin87, yep I thought the texture was very tender! Although the thighs were skinless it still had a little more fat than the breasts which made it more moist. I will definitely be making them again but probably with the skin on to make a little more juicy.

That' s a great idea !!!

Saw something sort of like this elsewhere & it looked real good, too.....might be time to get around to this type thing.....good lookin' cookup !!!!
