Title: Happy St. Paddy's Day

My company asked me to cook up some corned beef brisket for our St. Paddy's Day potluck.  They provided the meat and a 6 pack of Irish fire extinguishers if I would only put in the time.  Never smoked corned beef before, but I figured I'd give it a whirl.  Started the fire around 11pm and threw the meat on around Midnight once the Weber settled in at 240.  We had some wicked winds here but the WSM held rock solid all night.

I think that's a yes.  15lbs of beef turned to shrapnel in minutes.

Russel - awesome job!  As Z said - that looks cooked to perfection.  I am craving a plate and an "Irish fire extinguisher" right now.
