Title: Beef ribs!

Sold our WSM, and have not done beef ribs since! Can i do these in a kettle? Not a fan of the snake method!
& can i still do the 3 2 1 method?

Just do a Minion. Although I would advise using the snake.  It works and works well.

I have done them in my kettle by using the snake, and also by using charcoal baskets on each side.

Backribs, I burn on either side & they come out pretty even......

I would only wrap & braize the shorts, but whatever you're comfortable with doing..............
