I picked up some pork back ribs today. Rubbed them with salt, pepper, garlic, and onion. One of the racks also got some New Mexico chili powder.

I forgot the 3 hour pic, the pre-foil pic, the post - foil pic etc.
I have them finishing in some sauce right now. I will get another shot when I pull them off.
I did a 3-1-1 with these and I like the results. The kettle ran between 250-300 at the lid. Looked like 225-250 at the grate. I turned the grate every hour to keep the meat away from the fire. I could have easily fit a third rack on this big thing!
