Hope all the Americans had a great Thanksgiving. lots of great looking birds and those turkey croquet sliders look amazing.
Just thought I'd share what I did with my leftovers this year.
In a pot I combined:
2 tbs oil
2 tbs butter
one small onion
1 ts minced garlic
1 ts minced ginger
salt and pepper
and about a cup of dark meat turkey and the bones from 2 legs.
I sauteed them until brown and the meat started to stick and create brown bits of flavor on the bottom of the pan.
at this point I added 4 cups chicken stock and 3 cups water and let everything boil for 90 minutes.
I then lowered the temperature to a rolling boil and added:
1 can of coconut milk
2 1/2 tbs of curry powder
1/4 cup sriracha sauce ( it was hot so add less depending on preference)
1 diced red pepper
1 cup diced green beans (leftovers)
1 cup diced white meat turkey
and let simmer for 30 minutes.
I then removed the bones and whisked 2 cups of the liquid into a bowl of roughly 2 cups of mashed potatos before pouring it back into the soup to thicken.
What was originally made to be dinner and lunch for the next few days turned into my friends and I devouring the entire pot.
shrimp and rice would be a nice addition but this was just using what was around the house.

thanks guys was just looking at a container of leftover turkey, mashed potatoes and green beans and couldn't stomach the thought of just microwaving and eating it. I'm not a big turkey guy to begin with.
