The WSM keeps the heat even all around so you don't get hot spots like the close proximity of a kettle......
Did you brine or otherwise fiddle w/ flavors?

Thanks, Ken. I was pleasantly surprised by the even coloring. It was a basic bird with an overnight salt rub and basic spices.
Cool.....so like a dry brine........one of the better ones spotted on the InterToob this year, my friend!!!!
