Title: First time for a whole bird on the Performer

I'm rollin the dice today and am hoping for some tasty turkey! Brined for 24hrs in an apple cider based brine. Stubbs briquettes and a couple small chunks of applewood at the start.

Thanks guys, this cook went just as I planned it! I made gravy with some of the drippings and stock I was simmering all day from the parts. The absolute best gravy I have ever made.
