Fantastic looking pork chops. How did you prepare them?
I put a thin layer of mustard on the pork steaks then put on butcher bbq honey rub.
Four hours?!

Those look very good. Never thought to cook chops like that but now it is in my mind. Thank you.
Looks great, Irv!

Fantastic looking pork chops.
Those aren't traditional pork "chops"... they're pork "steaks". I think this is a St. Louis (or midwest?) thing. Pork steaks are essentially a pork shoulder sliced anywhere from 1" to maybe 2" thick, then grilled.

They are usually cooked over high heat until "done", then put in a pan of bbq sauce (and beer!) for anywhere from an hour and half up to, well... four hours. Braised, I suppose. They are amazing... unbelievable flavor!
When I was in college I used to broil them in the oven!

I was thinking the same thing! They look like they turned out great!
Here is the traditional way to do St. Louis Pork Steaks.

I made them this way last night except I substituted diet coke for the beer and I used Bone Suckin Sauce Hot Rub instead of the one listed in the recipe. They were fork tender and very tasty. My 5 year old ate a whole one himself! I moved away from the St. Louis area almost 7 years ago and hadn't made a pork steak since. Saw some on sale the other day and picked up two packages. My wife informed me we won't be waiting 7 years to do them again. Sorry, no pics as they were gone too fast!
