The boys were coming over, and they wanted to taste my meat. :-[ They kept seeing pictures on FB and wanted to see if it tasted as good as it looked. But the call was made that I shouldn't prep any salad.
So beef ribs it is!:D

A simple rub, and the 6 odd KG of beef ribs was ready to roll.

With the snake and the water pan prepped from the night before (finished work at 01:00) I was up at 06:00 to fire up the Performer and get the show on the road.
I had also prepped some Turds using my new favourite Hungarian sausage, and planned on cooking a stack of Choritzos. These all went onto the SS a few hours later and I let them go indirect for about an hour and a half.
