Title: Stuffed Pork Tenderloin

Got a couple of pork tenderloin

Removed the sliver skin and butterflied them

Seasoned them and spread spicy mustard on the inner side

Covered with Parmesan cheese and dried thyme and oregano

And then topped it with a mixture of sautéed spinach, onions, garlic and lemon juice

Placed a smoked sausage in each

Rolled them and tied them up

Grilled them

Then let them rest for 15 min

Sliced them and served them with Basmati rice, grilled Granny Smith apples and grilled corn on the cob :)

Z - lots of flavor there - good stuff!

I bet those slices would make for some great sammies (toasted kaiser roll, a little more spicy mustard, lettuce for crunch, etc).

I have yet to do stuffed tenderloin, thought of it but never done it.  Yours looks beauty indeed.
