Got a couple of pork tenderloin
(http://i45.photobucket.com/albums/f62/bbcue-z/TL1.jpg)
Removed the sliver skin and butterflied them
(http://i45.photobucket.com/albums/f62/bbcue-z/TL2.jpg)
Seasoned them and spread spicy mustard on the inner side
(http://i45.photobucket.com/albums/f62/bbcue-z/TL3.jpg)
Covered with Parmesan cheese and dried thyme and oregano
(http://i45.photobucket.com/albums/f62/bbcue-z/TL4.jpg)
And then topped it with a mixture of sautéed spinach, onions, garlic and lemon juice
(http://i45.photobucket.com/albums/f62/bbcue-z/TL5.jpg)
Placed a smoked sausage in each
(http://i45.photobucket.com/albums/f62/bbcue-z/TL6.jpg)
Rolled them and tied them up
(http://i45.photobucket.com/albums/f62/bbcue-z/TL7.jpg)
Grilled them
(http://i45.photobucket.com/albums/f62/bbcue-z/TL9.jpg)
Then let them rest for 15 min
(http://i45.photobucket.com/albums/f62/bbcue-z/TL10.jpg)
Sliced them and served them with Basmati rice, grilled Granny Smith apples and grilled corn on the cob :)

Very tasty :D
Z - lots of flavor there - good stuff!
I bet those slices would make for some great sammies (toasted kaiser roll, a little more spicy mustard, lettuce for crunch, etc).
Winz
