a long time ago.....seem to remember it's like alder / pecan....sort of a thing for fish & lighter pork

I've used American Beech in my offset smoker. I believe there are approx 10 or so different types of beech.  Beech and oak are from the same family.  Beech is similar to White Oak in flavor (i.e. medium flavor). :)
