Is the color is throughout? Man that looks really cool 😎. How did it turn out?

Nice color. Best way to cook those is to hang it, preferably indirect.

They were so delicious I couldn't stop eating them.
Indirect pit temp 275 one hour.
Braised in covered foil pan with the Chinese Ribs sauce and half a beer one hour.
Finish over the coals mopping one each side just enough to put a little char on the pork.
Outrageous.

Your Char Siu looks on point!
Ballast Point Grapefruit Sculpin is delicious too! I should've bought stock this last summer, I'm pretty sure I single highhandedly increased it's value.

I have some marinating for the weekend.

Can't wait until tomorrow. Decided to slice some and throw it in a skewer.
