Used the bank + brick method with some RO Lump and a couple of hickory chunks...with a water pan under the bird. Bird was brined for around 5 hours in a basic brine and then hit with some Yardbird rub. Not bad for a first attempt at a spatchcocked bird. It was super juicy and my wife and boys devoured it.

I need to get a smaller pan so my bricks can sit even...I'm OCD like that. I've been using a 9x13 cake pan that was previously a water/drip pan in my Masterbuilt propane smoker. Result have been good though. I've done quarters, legs, and now the whole bird like this. Gonna do some ABT's and MOINKS next week for a get together. Gotta have plenty of bacon wrapped goodies or compliment the two 10lb butts.

Thanks. It was my 6th time cooking anything on a Weber kettle. Switching from propane has been great, I think I'm getting the hang of it.
