First time doing onion bombs today. Used a mix of ground Chuck and smoked sausage to stuff the onions. I used Vidalia onion cut the ends off. Slit the onion half then separate the layers. I only used the biggest four layers of the onion.
I had some pork smoked sausage so removed the casing and mixed with the ground Chuck. Season with what ever you like.
Roll in to meat balls and fill one side of the onion layer then place the other layer.
Wrap in bacon and your good to go!
Cook for 45 min. or until 160 degrees. I cooked them indirect heat at 350.
