To christen my new Performer I used a couple of Tomahawk steaks. 2" thick and 2+ pounds each.

Took about 40 min indirect, then a sear over the coals.

Cool looking steaks. You can just pick them up by the bone and eat them caveman style!

Went to 140 IT captjoe06, family doesn't like them too red. They were still very tender.
