I saw them on sale the other day for $1.29/lb so I picked up a couple 7 1/2 pounders. That's a good size for the 14 WSM.

After a ciuple hours

I'm going low tech. Remote thermo is in the drawer and I'm going by the lid thermometer. It started out about 225° F and after a couple hours it is up to 250° F. I'm happy with that.

I'm afraid there is no finish to see. About the time it came off the smoker we were on our way to our grandson's birthday celebration. I didn't take time for pictures and just foiled them and put them in a cooler to rest. That night they went into the refrigerator and the next day I warmed them enough to pull them. The half pound or so I ate while pulling tasted great. :D

Happens to me all the time. After a long cook and a handful of beers I'm not always the best at remembering photos....but I'm trying to get better at it.
