I couldn't resist, I cut off a piece of the end to taste. Holy Shit this is gonna be good. I'm going let it rest then refrigerate overnight and slice tomorrow. More pics to come.

@fedex Looks like you're cooking on an SSP(?). A few months back I got a 2002 18.5in WSM from a guy in Portland who was moving into a downtown appartment. He said he bought the smoker new -and- had never used it for anything but bacon. I decided right then I was going to make bacon with it too. Yours looks really really good, congrats. SJ

He said he bought the smoker new -and- had never used it for anything but bacon. I decided right then I was going to make bacon with it too. Yours looks really really good, congrats. SJ

Doing this was fun but most of all Bacon at the Market is Almost $6.00/lb. I made $100.00 of bacon for a little over $30.00 and from the first couple pieces I fried up there's no comparison. Thanks for following this.

@fedex There is NO comparison between real bacon and mass-produced bacon-like substance. Great choice on the cut(meaning location of sow belly), it's mostly meat ;D SJ

Curing time 6 days. And thanks, bacon is sooooo good.

Costco has whole pork belly often for $2.20-2.99/lb (last one I got was 9.5 lbs!).
I do tend to smoke mine with applewood chunks on my WSM for 4-5 hours.

I was expecting it to be good the first time I made it, but I never expected it to be THAT good. Well, it was THAT GOOD! It is totally different that anything you can buy at the grocery store.

Absolutely right on everything. Hopefully it wasn't beginners luck. I have a 15#er curing right now and I'm not going to change anything (except the extra salt in the cure).

I gave more than 1/2 of my first batch away to friends. That is why there is an emergency need for more bacon. You're right, they all want more.
