Thanks folks, I’m feeling very much at home already. What is your favourite foods to cook on the bbq that is good for kids as well. I willing to try new things just need the guidance, cheers.

Welcome from Austria. My fam likes hole chickens, babyback ribs, Burgers, hotdogs, XXL porkchops, wok veggies....etc

A Weber cooker is a grill for everything and everytime for everybody and lasts for lifetime. But take care about it!

Bertl I have tried baby back rib but were over done and dry  :( I would love a recipe to make them pop  ;D

Welcome from Illinois USA. The thing with ribs is you've got to cook them low and slow. Ribs should take a minimum of five hours for a good rack. Google search the 3-2-1 method for ribs. That sound get you going. Good luck!

For ribs, try the snake method for coal arrangement (lots of videos on YouTube on how to set up, light and control on your kettle). The 3-2-1 method is a tried-and-true method for ribs (I use this myself - 3 hours in the smoke, 2 hours double wrapped in foil, 1 hour unwrapped (no smoke) and add sauce to set). For ribs, I like to put the rub on my ribs the night before and let them get friendly in the refrigerator. Just before I put the ribs on the grill the next day, I add more rub to cover any spots that might have worn off.

Based on what folks have shared with me and my own personal experience in smoking with my kettle: 1) invest in a wireless thermometer so you know what the temperature is inside the grill; 2) target temp is a range - not an exact number; 3) try different recipes - I was shocked at the variations out there and what fit my palate best (check out Malcolm Reed's YouTube videos as I think he makes the bbq process very simple); 4) don't get stressed out - have fun. It's a 5-6 hour cook, so get comfy.

That is a beautiful kettle you have.
Do a search on the "snake method" for charcoal placement.  It works really well to help hold a lower temperature for quite a while for low & slow cooks. 
You'll probably learn a lot here.

Hi folks, I’m from County Armagh in Northern Ireland, we own an Airbnb in Belfast so get lots of American friends visiting our lovely country.

Quick update cooking ribs today using the 3-2-1 snake method. Heat controlled nicely around 225 so far all good and nearly finished.

My grandfather on my Mother's side is from Mayo, in Rosturk, near Achille Island.  Went back for a family reunion maybe 15 years ago & his niece owned the house he was born in.  I recommend that wherever someone is from, if they get a chance, go & visit.  If you, @Shoestringshop, wind up going, I can tell you some things I stumbled across that saved a decent amount of cash.
