I work with several Hispanic guys and they always have some form of homemade salsas to apply to their lunch items. Over the years I've learned that their salsa is about like our BBQ sauces. Ask 4 people how to make it and get 4 very different answers. One thing that seems to be a common denominator is the peppers are the star of the show.
Also, I like their packaging. They put the sauce in plastic drinking water bottles. Portable and the opening works perfect to pour a little on food but big enough to let small chunks through. Then just toss the bottle when empty.
Anyways, I asked the recipe for one I tried and really liked. Here it is.
5-6 jalapeņos grilled indirect for thirty minutes then turn in the flame a little, 1 large tomato wrapped in foil and grilled indirect, remove from grill, blend whole, add a pinch of salt.
That's it! I made this last night with a chunk of mulberry in the fire and cooked along side chicken legs. For only three ingredients it was flavor packed due to the smoke and char gained from the grill. I did put a touch of lime juice in it. I figured I would share since we all have the grills fired up frequently and this is an easy add on. You end up with something that looks like this. Doesn't necessarily look great but it's a great easy sauce if you like spicy.

Is the whole jalapeno, seeds and all, blended with the tomatoe?

I cut the stems off before going in the blender but left seeds in. You could certainly remove the insides to lessen heat.

Salsa is like chilli. Tons of variations. Around this area there are many to choose from and they are all awesome.

It's a little different. I removed the insides from the jalapeņos after I pulled them off the grill to temper the heat. Also I charred these slightly more for more color in the sauce. I cooked them with skirt steak and chicken. It was a big hit as a sauce for fajitas.

I just ran out back and checked. No Jamaican pimento trees in my yard. Where can I find that other than Jamaica?

I got some at a local-ish barbecue store. If you don't have any available, you can use allspice berries. It smells fantastic. Amazon might have it.

Nice recipe! I'd suggest also adding in a few cloves of grilled garlic.

Gave it a go today. 6 jalapeņos 4 small tomatoes. Pinch of salt to finish.
Really got some good flavor, but I'm taking the seeds out next time. Damn, I was on fire! Passed the heat, good texture and easy.

So I'm thinking I'll be trying this but probably with poblanos as I am too much of a delicate flower for the serious hot stuff. My daughter, gets I'll make with habanero and she will say it's great, but could you make it hotter next time. Lol.
If you like this, may I suggest grilling some husked tomatillos and garlic! Toss them with a bit of oil and some s/p, pop them in a little disposable pan and set it on the grill while it warms up and before you get your grates clean. I usually foil the top too for the steam - don't worry, it will pick up smoke. Then blend it and brush it over your grilled chicken or pork. It's wonderful and if you blend in some of your grilled salsa, all the better.
I make the tomatillos a lot. I'm planting some this year. And if I'm making deviled eggs I mix this with the yolks and pipe it in the whites. Trust me-totally worth it.

Gave this a shot. SPICY! I loved the flavor and so did the neighbors but the wife didnt like the smokiness of it. 4 tomatoes and 6 large jalapenos. I'll definitely be experimenting with this base.
