Tried out the hanging rack today by doing some ribs in the 18. It was a last minute decision so I ran out this morning and picked up 3 slabs of baby backs, and a 3/16" steel rod from home depot. The weber rack hooks didn't seem like they'd work well for the ribs and I didn't have enough time to order the PBC hooks so I had to make my own. Per @LightningBoldtz advice, light coat of mustard, rub, and hung to smoke for 3 hours at 300, no water pan, right over the coals. Those look great! I would think you get a slightly different texture using this method as well. If I ever get a WSM I will have to try this.

Yummy. Still haven't hung anything in my WSM yet. I have the 22 and I need to get an 18s coal ring or make one from expanded steel. The 22 uses a lot of fuel.
