Fired up the garage cooker due to rain. Hit aldi for a few key ingredients. Skinned the thighs and grilled them and the sausage. Using some turkey stock I had in the freezer. Still going so not sure how this one will go.

Thanks fellas. I started to lose my fire so I added some coal. It went from barely a simmer to a hard boil quickly. I then took the pot and grate off and shoved the coals to the side and placed the pot in the basement so I would have room to place the lid and use vents to control temp. Worked great and tasted great. It had some great flavor from the meats being grilled first. I was in a rush this time so needed to start with high heat. Next time around I might use a snake to keep temp in check and slow cook it. I enjoyed doing all the prep and cook in the garage and I always like combining cookware and kettles.

grate cook I love gumbo
