Title: Paella on the Kettle
Post by: BBcue-Z on March 27, 2015, 03:18:06 PM
Made this Paella during a camping trip a while back on the 22.5 Kettle.
I placed the coals on one half of the grill so I could create 2-zones of heat.
I placed a Paella pan over the coals initially to heat it up and sauté on high heat

Here are some of the ingredients
(http://i59.tinypic.com/28upyeb.jpg)
Started with diced Spanish Chorizo to flavor the oil

Then added the peppers, onions and some garlic

And the Marinated chicken pieces

The chicken is almost cooked

Added the rice

Then the reaming of the cooked ingredients and added the broth. I moved the pan opposite of the coals so the rice can have time to cook all the way through on a lower temp

I grilled the rest of the veggies and some shrimp while the rice was cooking and added them to the pan

Added green peas

Garnished with green onions and grilled lemon wedges and some fresh tomatoes and the Paella was served :)

Great dish to have by the beach :)

That's Winz's paella cookup at our Napa Meetup awhile back....looks like the same pan, but his covers the whole kettle....you guys that can cook rice & add these fixups & come up with a dish like that are my heroes!!!!

Somewhere, probably not this thread .... I need some paella 101 guys. Here's my limited understanding so far:

Food gets added in a certain order but "stays" on it. Unlike with say, a griddle or wok or disk, the finished cook resembles a casserole.

"Paella" is one of those things that describes both a dish to eat (and so, the ingredients) and the style of pan used to cook it, yes?

The answer is yes on both questions. Paella is cooked in layers, but if you're limited on pan space you can cook things separately and then assemble at the end. flavoring the rice is the most important step and that's why you start with things that are going to contribute to that process.
And Paella refers to the dish and the pan it's cooked in.
Here is a great video that shows the process from beginning to end
