Salmon Sliders With Spicy Ginger Sauce and Pickled Vegetables

Salmon Burger on cedar plank

On a new cookbook I found this recipe and I finally decided to use a cedar plank that for a while waiting to be used.

ingredients
For the vegetables:
8 oz rice vinegar
2 tbls white sugar
1 tsp salt
½ cucumber
½ onion
1 habanero

sauce:
4 oz mayonnaise
2 tsp grated ginger
1 tsp hot sauce

Burger:
2 salmon fillets without skin
3 spring onions
1/2 coriander
1 tbls grated ginger
2 tbls lime juice
2 tbls soy sauce
1 tbls extra virgin olive oil
1 tsp hot sauce
1 egg
1oz breadcrumbs blended
q.b. cheese President

Quantities are those of the recipe but I did for many eye and for the sauce I used garlic sauce Heinz .
For the vegetables I put in a baking dish vinegar , sugar and salt, then I cut cucumber and onion into strips and put them in the pan to add flavor and to soften.

To prepare the burger I first blend the crumb of two slices of bread, then I blend the salmon and I finally whip the rest and then mix everything .. from the compound I got two giant burger which I sprinkled with bread crumbs remaining and put in the fridge to rest .
An hour before starting cooking I put to soak the plank in water and set the OT for indirect cooking with two fire point .. once warmed up well I put the plank directly on the embers and as soon as I began to see that I was smoking I turned around and it took me over two burger .. firing lasted about 20 minutes and in the past I have added a few slices of cheese.
I stuffed a sandwich Arabic before putting the sauce , then the burger and finally the vegetables ... I added the prawns for a greater crispness . The result was far beyond my expectations , the burger was soft , juicy and flavorful and the plank gave a smoky flavor that is not annoying and the large amalgamated with the other flavors .. the whole thing was really special, the unique discordant note was the Arabic bread that I was not satisfied as the bun used for hamburgers for the rest ok !

Cedar planks are a great way to cook fish on the kettle.
