Pork pastor on a Weber

For awhile now I've been thinking about trying to make pork pastor.  In the taqueria's, they have a vertical rotisserie they use to stack cuts of meat topped with an onion or pineapple.  It's called a Trompo. I started to do some hunting to see if such a device existed for outdoor grilling.  My search led me to this:

Pretty cool idea that I want to try soon.  For ease, I'll probably just use boneless shoulder.  I already have to gourmet sear grate but if you don't have it, you could always just mod an old standard grate (which I might try to do anyway).  By modding an old grate you could  reduce the size of the hole to get the coals closer to the "trompo".  Anyway, I found this interesting.

I do Al Pastor every now and then, but I buy it at Mi Pueblo and just grill it up in a paella pan on the. They do a better job than I could in preparing it. Then serve it with cabbage and salsa wrapped in corn tortillas. If you have a Mi Pueblo near you give it a try.

^ Holy roti overload!  That's amazing.  My friend has a homemade backyard roti that can do 8 chickens at a time and I thought that was cool.  This guy is a roti nut!

I make it at home pretty often, although I usually cook it crispy in a cast iron pan on the stove, or on the grill in the cast iron.
