Shoulder Tender

My local grocer, Fareway, has been selling these in the meat case. They are very lean and in the 4-6 $ per lb range. Shaped like a pork tenderloin they slice up nicely for stir fry or fajitas.


Tonight was dinner by myself and I stuck with steak and baked. Weber Chicago steak seasoned, direct over hot fire, 4 minutes per side, turning 45 degrees halfway through.


Moved to cool side for 1 min and pulled at 140. Man, these are good. A definite buy if you see them for sale.

I think I've seen these around.....at 1st I thought it was the smallest part of the clod, but upon further investigation, it's not ~~~>

Looked like a leaner flatiron. Seems to be next to the flat iron before butchering.    Looks good too!
