2.25 hour baby backs and turned out great. No sauce on it, just my mustard, salt and pepper rub.

2x1 snake w/water pan.  Temperature between 290-300. 1.25 hours then foil meat side down with a little apple cider vinegar for 45 min. Then unwrap and grill for another 15 minutes and rest for 10 min. The meat didn't fall off the bone like the 321 method where it's like pulled pork. This had a bite and left the bone clean. You can see a couple of the bones in the pic. Still tender and juicy. Oh, I also had alder wood smoke as well.

Yup, not a huge sauce person.  8)
