Christmas Turkey

I was placed in charge of the turkey, my Mother in charge of beef and dessert. She did a roast and a pie. My wife did the sides. I did the Cajun butter injection and finished off with creole seasoning. This was an 8lb turkey and I did use the whole jar, probably didn't have to but I did anyway. Took just under 2 hours at 325-350. I used 4 chunks of Apple wood. 2 chunks per charcoal basket.

The '95 Smoked Cherry OTS on duty.



Going on..



About an hour and 20 minutes in..



Getting warmer...





Resting..


Chow time...






No fancy ties but definitely Granny's pies... Black raspberry.
