Setting up the grill...

Lighting a dozen or so coals in my mini chimney...

Stable at 235...

Thin blue...

4.5 hours in and mopped with apple cider / Worcestershire sauce...

It was awesome but I blew it on the money shot. Didn't realize til after the meal was over and cleaned up that I flinched on the plated pic and it's really crappy.

Here it is for what it's worth.

Corn muffins on the BGE...

Very juicy and tender.
