Oh yeah! Spares are my favourite.  :D
I, too, like to separate the meat on the "brisket" cut ... you know, the chunk with all the cartilage.
Do it while still hot. Comes apart rather easy. That meat is so flavourful.

That bun alone looks delicious!  :D ;)
